For Pastry Chef Suhas, the story started as a young boy watching his uncle at work. Cakes taking shape, chocolate transformed into delicate creations, simple ingredients becoming something altogether unexpected. It was a world that fascinated him. What seemed like magic at the time would eventually become a lifelong passion. 

That curiosity never really left 

Instead, it grew into a career that has now spanned nearly two decades. Yet despite the years, the countless desserts, and the experience gained along the way, Suhas still approaches pastry with the same sense of excitement that first drew him into the kitchen. The belief that there is always something new to discover, another technique to master, or an idea waiting to be brought to life. 

Pastry is where creativity and craftsmanship meet 

He describes his style as modern, elegant and flavour led. While presentation is important, the experience always begins with taste. A balance of flavours, textures and thoughtful details that come together to create something guests remember long after the final bite. 

Inspiration often arrives in unexpected ways. A page in a book, a conversation with another chef, a new trend emerging from across the world or simply an idea that appears and refuses to leave. Wherever it comes from, Suhas enjoys the process of turning imagination into something real. 

Chocolate has become one of his greatest creative passions. 

Over the years, he has developed a deep appreciation for its complexity, from understanding different varieties and origins to exploring how it interacts with fruits, aromas and flavour combinations. Some of the creations he is most proud of have been elaborate chocolate showpieces, intricate displays and large-scale centrepieces that begin as a sketch before being carefully crafted by hand. 

Yet despite the technical skill involved, what matters most to him is always the reaction they create. 

The smile when a dessert arrives at the table. The moment of surprise. The conversation it starts. The memory it becomes part of. 

Since joining Castle Hotel, Suhas has found the freedom to bring that creativity to life in many different ways. From festive displays and seasonal celebrations to afternoon teas and special occasions, each creation is an opportunity to make a guest's experience feel that little bit more memorable. 

After nearly twenty years in pastry, what continues to inspire him most is remarkably simple: making people happy. 

Knowing that something he has created has become part of a wedding, a birthday celebration, Afternoon Tea with loved ones or a quiet moment together remains the most rewarding part of the profession. 

Because while pastry may begin with ingredients, technique and imagination, the best creations are often remembered for something else entirely.
